The grapes for this wine are destemmed in the cellar and gently pressed at 0.3-1.8 bar. In the first 20 hours before fermentation, the grape juice undergoes a clarification and fining process. The fermentation is made in closed steel tanks at a constant temperature below 18° and lasts up to 4 weeks.
Afterwards, the wine is matured in steel tanks for seven months. Depending on the vintage, biological acid degradation is partially or entirely carried out.
The "Bourrée" is filtered before bottling. The alcohol level is between 12.5% and 13%, depending on the vintage. Before the wine goes on sale, it stays in the bottle for 6 months or more at a constant temperature.

Situated on the highest mountains of the Penedès, close to the sky, is where the freshest and most aromatic Xarel.lo and Sauvignon Blanc grapes grow.
The grapes for this wine are cultivated according to organic and biodynamic methods, pesticides and herbicides are consistently avoided and no irrigation is used. A herd of sheep fertilizes the soil and bees help pollinate the vines during the flowering period.
Grape varieties: 85% Xarel.lo and 15% Sauvignon Blanc
An unfiltered, natural, vintage wine made from organically cultivated Chasselas grapes from the Domaine's vineyards.
Vinified with yeast-raised in the cellar, its fine lees (deposit) give it a delicate mildness and a pleasant fruity taste. The wine's delicate persistence is accompanied by aromas of elderflowers and seeded fruits.
Made from 100% Sauvignon Blanc grapes, grown in Piano di Magadino, Ticino. The vineyards located at 200 metres above sea level are planted in rows according to the 'Guyot' method, the average age of the vines is eight years.
During the growing season, the vines benefit from a very long period of sunshine. In summer from the warm twilight sun and the evening breeze from Lake Maggiore.
Sarabande is matured in barriques and stainless steel tanks for seven months. Depending on the vintage the acidic fermentation is carried out partially or completely organically.
This wine is filtered before bottling. The alcohol content is between 12.5% and 13%. Prior to release, the bottled wine is kept in warehouse at a constant temperature for at least 6 months.
An excellent aperitif wine, it goes well with cold starters, canapés and first courses, like asparagus risotto, tagliolini shrimps or courgette. The ideal serving temperature is between 8° and 10° C.
Floral and intense. This microcuvée is full, rich with notes of ripe citrus fruits followed by a nice acidity that brings balance into the wine, leading a good ageing potential. Ginesta is part of a collection of Microcuvée wines, a selection of organic and biodynamic wines produced in very limited quantities, only in the best years.

This elegant Microcuveé is made from 100% Xarel-lo grapes, cultivated according to organic and biodynamic farming methods. Xarel-lo is a variety of grape indigenous to the Penedès region. The grapes for this particular wine are grown in vineyards over 80 years old. Additionally, the special soils and microclimates, yield to more sophisticated and complex wines.
This natural wine was fermented in an amphora made with grey clay found in an archaeological site within the vineyard, where thousands of years ago Iberians lived, they also cultivated grapes and fermented wine in clay amphoras. No sulfites added. Limited production.
100% Xarel.Lo. This is a highly expressive natural wine, completely handmade, biodynamic and organic without added sulfites. Non-filtered. The distillery has been featured in magazines and blogs. This wine can be enjoyed at Michelin Star restaurants, including El Celler de Can Roca and Noma. Produced in small batches of only 1056 numbered bottles.
