Each bottle is filled from a singular barrel, offering a unique tasting journey, maintaining the typical defining flavours of bourbon.

The intensity and flavour of each are unique, fluctuating from smokey to peppery or floral.

Weather and placement where the barrel sits inside the rickhouse can influence the flavour, proof and time a barrel needs to age.

The higher the floor, the warmer the temperatures and the higher the proof. The top floors produce spicier bourbons while the low colder floors produce a floral flavoured bourbon.

There is a serial number on the neck of the bottle that contains information about that particular bottling.

Balvenie Tun 1509 Batch 6 is the 2019 release in the series, bottled at 50.4% volume without chill filtration. David Stewart selected 21 casks for this batch.

MATURATION: Nine ex-bourbon American oak barrels were combined with five refill sherry butts and seven refill sherry butts previously used for DoubleWood. The whiskies married for three months in Tun 1509, the large vessel housed in Warehouse 24, before bottling.

Hampden 1983 by Kill Devil is a 35-year-old Jamaican single cask from Hunter Laing, bottled in 2019 at 58.1% volume. Distilled to the HGML marque and limited to 198 bottles, it is a rare old Hampden with real collector focus.

MATURATION: long continental ageing in oak has polished the sharper edges while leaving the marque's force intact. The cask has added structure rather than sweetness, so the rum stays direct, concentrated and clearly shaped by Hampden's high-ester distillate.

SERVING: serve neat at room temperature in a Glencairn or small tulip glass; add water only drop by drop. Pair with dark chocolate, aged coffee or a blue cheese. For cigars, choose My Father Le Bijou 1922 Grand Robusto: cocoa, cream, toast and wood have the weight for this style.

This recipe is the second version of the handcrafted gin from the Okinawa distillery - one of Japan's most dynamic gin producers. "Recipe 02" has more of a fresh herbaceous flavour compared to the original "Recipe 01".

"Masahiro Okinawa Gin Recipe 02" contains a large amount of Tankan, a typical Okinawan citrus variety, combined with southern mint, cloves, moon peach, ginger and lemongrass to create a craft gin that is refreshing in taste and aroma.

Masahiro Okinawa Gin Recipe 1 is Okinawa's first handcrafted gin, distilled from awamori, a rice liquor indigenous to the region. Recipe 1 features botanicals such as roselle, from the hibiscus family, guava leaves and long pepper, though the most interesting addition is goya, a green, bumpy Okinawan bitter melon.
